Shepherd for a Day is a four to six hour farm experience in the hills behind Rethymno, run with Giorgos, a working Cretan shepherd. You milk the animals, turn the fresh milk into Mizithra or Graviera over an open fire, make Kalitsounia cheese pastries by hand, pick vegetables from the garden and then sit down to Antikristo, the slow-cooked lamb roasted upright around the embers. Pickup is at 11:00, hotel transfer and lunch are included, groups run to a maximum of eight, and the day costs €240 per person or €790 for a private group of up to four.

  • Meet Giorgos, a working Cretan shepherd, on his own farm
  • Milk the animals and make Mizithra or Graviera cheese over an open fire
  • Hand-make Kalitsounia, the traditional Cretan cheese pastries
  • Harvest seasonal vegetables and herbs from the farm garden
  • Antikristo lamb lunch with local wine, cheeses and salads in the open air
  • Professional photoshoot included, edited gallery delivered within 48 hours

The shepherd's life in Crete is one of tradition, harmony with nature and a deep connection to the island's rugged landscape. For centuries shepherds have tended flocks of sheep and goats in the mountains and made some of the island's best-loved foods. The day is guided by the rhythms of nature: waking with the sun to move the flock to fresh pasture, milking the animals, and making cheese by techniques passed down through generations.

Shepherds often work alone, surrounded by Crete's mountains and valleys, using stone huts called mitata to craft cheese, prepare meals and rest after long days. It is demanding work, but it comes with a close bond to the animals, wide views and a genuine self-sufficiency that has almost disappeared elsewhere.

This experience puts you inside that world for a day. You learn to tend the sheep, milk them and make cheese, but you also get the slower pace, the hospitality and the food that go with it. Nothing is staged for visitors: the farm works the same way whether you are there or not, and everything you eat at the end of the day you have had a hand in making.

Så går dagen

  1. Arrival and goat milking

You are collected from your hotel at 11:00 and driven up to the farm. The air smells of herbs and earth, and the sheep wander around the farmyard. The first task is milking, which is calmer and more meditative than most people expect. The shepherd shows you how to handle the animals gently and you settle into the rhythm of the flock, the soft bleating and the crisp mountain air. It is hands-on work, and it gives you an immediate sense of the patience shepherds put into every day.

  2. Cheese making

Once the morning milking is done, the fresh milk goes over an open fire. The shepherd walks you through turning it into traditional Cretan cheeses such as Mizithra or Graviera: separating the curds from the whey, pressing and shaping, and the small tricks that have been handed down for generations. The process comes with stories and a good deal of laughter, and the smell of warm milk mixed with herbs drying nearby stays with you.

  3. Kalitsounia

Next come Kalitsounia, the classic Cretan cheese pastries. You make the dough from scratch, knead it until it is soft and elastic, then fill it with the cheese you have just made and aromatic herbs. Rolling and folding them is a tactile, almost playful job, and there is real satisfaction in seeing your own pastries go into the oven. While you work, the shepherd talks about village life, festivals and the traditions attached to each dish.

  4. Harvesting the garden

A short walk through the vegetable garden fills out the meal: tomatoes, courgettes, peppers and herbs, depending on the season. Your guide explains how Cretan cooking still follows the rhythm of the land rather than the supermarket. By the time you get back to the farmyard you have touched, smelled and picked most of what is about to appear on the table.

  5. Antikristo lunch

The centrepiece is Antikristo, lamb cooked slowly by the shepherd's own method: tender and smoky, carrying the flavour of the mountain herbs, served with fresh salads, the homemade cheeses and the Kalitsounia you shaped earlier. You eat outdoors, surrounded by quiet hills. Afterwards there is time to sit, wander through the fields, watch the sheep graze and let the day settle before the drive back to your hotel.
